Amaranth Chocolate Chip and Toffee Cookies

Cookies are a wonderful treat, I try to make them as healthy as possible and still not compromise the flavor or texture. These are addicting and wonderful. And they store well.

Ingredients
- 2 cubes (1 cup) softened butter
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 T vanilla
- 1 t. salt
- 1 t. baking soda
- 2 1/2 cups Wonder Flour™
- 1 cup popped amaranth
- 2 cups chocolate chips
- 1 cup toffee pieces

Preparation
Step 1
In Bosch mixer, mix the butter and sugars until smooth. Add in the eggs and vanilla and mix until smooth.
After mixture is smooth add salt, baking soda, Wonder Flour™, and popped amaranth.
Mix again and add chocolate chips and toffee pieces.
Mix well and then scoop onto a parchment paper lined cookie sheet and flatten out. Bake in a preheated 325 degree oven for 8 to 12 minutes. Do Not Over Bake!
