Breakfast Pizza

Ingredients

  • 1 tube refrigerated pizza crust
  • 2 TB olive oil, divided
  • 6 eggs
  • 2 TB water
  • 1 tsp Tabasco Sauce
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 TB Parmesan cheese
  • 1 cup shredded Monterey Jack Cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion, optional
  • 1/2 cup chopped bell pepper, optional
  • 1 cup chopped bacon, ham, and/or 1 lb. sausage

Preparation

Step 1

Roll out pizza crust onto a greased 15 x 10 x 1 baking sheet. Flatten dough & pinch up edges slightly. Brush with 1 TB olive oil. Prick dough with a fork & bake at 400 for 6 minutes or until lightly browned. Meanwhile, whisk eggs, water, & hot sauce. In a small skillet, heat remaining oil & add eggs. Cook & stir over medium heat until completely set. Spoon eggs over crust, season with salt & pepper, then top with cheeses. Add peppers & onions, if using. Top with meats. Bake for 7 minutes, or until cheese is melted.
