Garlic Ginger Bok Choy Sauté

Ingredients
- 2 bunches of organic bok choy {or 3-4 bunches organic baby bok choy}, cut into 2" sections separate whites from leafy ends
- 1 TB organic coconut oil
- 1-inch length of organic ginger, grated or diced fine
- 2 organic garlic cloves, pressed or minced
- Himalayan sea salt
- Coconut aminos, optional addition
Preparation
Step 1
Heat a skillet with coconut oil over medium heat. Add the firm white pieces of bok choy and sauté 2-3 minutes.
Add the green pieces, ginger, garlic, and season with sea salt. Continue sautéing until the garlic is fragrant and the bok choy is vibrant in color. Remove from heat and serve immediately with coconut aminos on the table as an optional addition.
