Cracker Cookies

Normally everyone makes these only at the holidays, but really, they are good year round. They make great gifts if you put them into a tin! I like to keep them in a zip lock bag in the fridge.

Ingredients

  • 1 sleeve Club Crackers
  • 12 oz Semi Sweet Chocolate Chip Morsels or Butterscotch Morsels (to cover- sometimes we use more.. don't make too thick, though.
  • 1 Cup (2 sticks) Butter
  • 1/2 Cup Sugar
  • 1 teaspoon vanilla
  • Finely Chopped Walnuts or sliced almonds

Preparation

Step 1

1. Line cookie tray with tin foil and spray the foil with non-stick spray
2. Pre-heat oven to 350 degrees
3. Lay crackers on the tray to fill tray entirely
4. Melt butter, vanilla and sugar together (2 minutes in the microwave in glass container?)-
5. Mix well to dissolve sugar. Pour mixture over crackers and spread to coat evenly
6. Bake crackers with mixture only, for 15 minutes (do not over cook)
7. Turn off oven
8. Remove tray from oven and sprinkle morsels in a single layer over entire pan of crackers.
9. Spread while melts.... if necessary.. place in warm oven for up to 5 minutes to assist in melting (careful not to over bake).
10. Sprinkle with chopped nuts while warm.
11. Fully Cool tray in fridge.
12. When totally cool, break into bite size pieces.
13. Store in cool dry place.
14. In summer (especially)... keep in zip lock bag in fridge. :)
