Ingredients

  • 1 cup all purpose gluten free flour (Bob’s, if you want to be like moi)
  • 1/2 tsp. xanthan gum
  • 1/3 cup unsweetened cocoa
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 stick unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 12 oz. semisweet chocolate chips (or whatever you like)

Step 1

1. In a medium sized bowl, combine the first 5 (dry) ingredients. Set aside.

2. In a large bowl, beat together the butter & sugar until light & fluffy. Add the egg and vanilla and beat until well combined.

3. Add the dry mixture to the wet mixture, reserving a few tablespoons of the dry mix, and mix until just combined. Toss the chips in the remaining dry ingredients to coat, and then fold in to the batter.

4. Drop 1 1/2″ balls (flattened each with a wet hand a bit) about 2″ apart on a cookie sheet (line with parchment paper to make your life easier).

5. Bake at 350 degrees for about 14 minutes, give or take. Let cool on the sheet for about 5 minutes, then transfer to a wire rack.
