Ingredients

  • 3/4 cup oats
  • 1/2 cup gluten free flour (any kind should work)
  • 1/2 t. baking soda
  • 1/2 t. baking powder
  • 1/2 t. salt
  • 1/2 t. xantham gum
  • 3 T. canola oil
  • 1/2 cup applesauce
  • 1/4 cup natural sugar
  • 1/4 cup maple syrup
  • 1-1/2 t. vanilla
  • 1 cup rice krispies
  • 3/4 cup chocolate chips (or carob)
  • 1/4 cup peanuts (or any other nuts you like)

Preparation

Step 1

Heat oven to 350 degrees. Line a baking sheet with parchment paper.

In a large bowl, mix together the oats, flour, baking soda, baking powder, salt, and xantham gum.

In a separate bowl, mix together the oil, applesauce, sugar, maple syrup, and vanilla. Stir the wet mixture into the dry and mix well. Stir in the rice krispies, chocolate chips, and peanuts.

Drop heaping tablespoons of cookie mixture onto baking sheet and flatten slightly. Bake 13 to 14 minutes or until cookies are set and edges are golden.

Let cool a few minutes on baking sheet, then transfer to wire rack to cool completely.
