Ingredients
- 1 can stewed tomatoes
- 1 can kidney beans, rinsed and drained
- 1 cup long-grain white rice
- 1 cup water
- 2/3 cup picante sauce or salsa
Preparation
Step 1
Cut sausage in half lengthwise: cut crosswise into 1/4 inch slices. In 10 inch skillet, combine sausage and remaining ingredients; mix well, breatking up tomatoes with large spoon. Bring to a boil. Reduce heat, cover and simmer 20 minutes. Remove from heat; let stand covered 5 minutes.
