Sweet Potato, Raisin & Walnut Salad tossed in Ginger Mayonnaise

Ingredients

  • 7 1/2 # Sweet potatoes, cooked, peeled cut into 1/2-inch cubes
  • 1 1/2 # Celery, thinly sliced on an angle
  • 2 # Pineapple tidbits, well-drained
  • 10 oz raisins
  • 9 oz Walnut halves, toasted
  • 2 1/4 Hellmann’s® Real Mayonnaise
  • 2 1/4 Sour Cream
  • 3 TBS Orange peel, grated
  • 1 1/2 tsp Ginger, ground
  • 1 1/2 tsp Salt
  • Bibb lettuce leaves
  • Pineapple leaves, trimmed to size
  • Red Bell pepper strips

Preparation

Step 1

1. Combine ingredients. Stir to blend. Pour over sweet potato mixture; toss lightly to coat. Chill before serving.
2. For each serving: Line salad plate with lettuce. Spoon 8 oz potato salad on top. Garnish with pineapple leaves and pepper strips.
