  • 1 cup+1/8 cup creamy peanut butter
  • 3/4 cup-1 cup sugar (enough to make dough firm)
  • 1 Tsp vanilla
  • 1 large egg

Step 1

Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with [parchment paper|.

Mix peanut butter, vanilla and egg until blended, then add sugar until mixed thoroughly.

Scoop out with tablespoon ( I roll them into balls to keep uniform shape, if they are too sticky to roll add sugar) and place about an inch apart on baking sheet. No not use fork to press down, these will be truffle like, not flat.

Bake 6-8 minutes, until edges are lightly brown.

If your oven runs hot, you may want to reduce the temp to 325-330 degrees because if these are baked at a temp that is too high they will spread, and trust me, you want them to keep their shape or you will loose that smooth truffle texture.

Variations:
Thumbprint: If thumbprint cookie is desired, remove cookies 3-4 minutes through baking, indent cookies with table spoon, and add about 1/4 tablespoon jam (strawberry is fantastic, but experiment because blackberry was also great). Sprinkle a bit of sugar on top for a candy effect to the jam.

Coconut: If you love coconut, roll in shredded coconut before baking, the caramelization on the bottom of the cookie is divine!
