Grilled Chicken Satay with Curried Peanut Sauce

Ingredients
- Ingredients - Marinade
- 1 C unsweetened cocoanut milk
- 4 T Yellow curry paste
- 2 T dark brown sugar
- 2 T Fish sauce (nam pla)
- 1 T ground coriander
- Ingredients - Satay
- 1 lb boneless chicken breast
- 18 long bamboo skewers (soaked in water for 15 minutes)
- Curried peanut satay sauce
- Spicy cucumber relish

Preparation
Step 1
Technique
Combine the marinade ingredients and mix well.
Slice chicken breasts thinly to make strips. Add chicken to marinade and stir to coat all the pieces.
Cover and refridgerate for 3-24 hours.
Turn on broiler and thread the marinaded chicken onto bamboo skewers.
Broil the strips of satay until done.
Transfer to serving platter with sauces when done
