  • Ingredients - Marinade
  • 1 C unsweetened cocoanut milk
  • 4 T Yellow curry paste
  • 2 T dark brown sugar
  • 2 T Fish sauce (nam pla)
  • 1 T ground coriander
  • Ingredients - Satay
  • 1 lb boneless chicken breast
  • 18 long bamboo skewers (soaked in water for 15 minutes)
  • Curried peanut satay sauce
  • Spicy cucumber relish

Preparation

Step 1

Technique

Combine the marinade ingredients and mix well.
Slice chicken breasts thinly to make strips. Add chicken to marinade and stir to coat all the pieces.
Cover and refridgerate for 3-24 hours.
Turn on broiler and thread the marinaded chicken onto bamboo skewers.
Broil the strips of satay until done.
Transfer to serving platter with sauces when done
