  • 2 Tbsp Olive Oil
  • 3 leeks, chopped
  • 2-4 garlic cloves, minced
  • 2 carrots, peeled and chopped
  • 1.5 cups diced red potatoes (1/2lb.)
  • 1.5 cups fresh green beans, chopped
  • 5 cups chicken broth
  • 14oz. can diced tomatoes
  • 1 cup canned white corn, drained
  • Garlic Salt, salt, and Pepper
  • 1 tsp lemon juice

Step 1

1. Heat the olive oil in a soup pot on medium low. Add the leeks and garlic. Let cook for 7-8 minutes until softened.
2. Add the carrots, potatoes, and green beans. Sprinkle with garlic salt and cook for 5 minutes.
3. Add the chicken broth. Bring to a simmer.
4. Add the diced tomatoes and corn. Season with salt and pepper.
5. Turn heat to low and simmer for 25 minutes or until green beans and potatoes are tender.
6. Add lemon juice and serve.
