Curried Catfish

Ingredients

  • 2 tbs soy sauce
  • 1 tbs oil
  • 2 tsp curry powder
  • 1/2 tsp ground ginger
  • Lemon pepper to taste
  • 1 1/4 lb catfish fillets
  • 1/3 c. dry-roasted peanuts (opt)

Preparation

Step 1

Preheat oven to 475 degrees. Grease a baking sheet. Combine the soysauce, oil, curry powder, ginger and lemon pepper in a plastic bag. Add the fillets and toss to coat. Arrange the fillets in a single layer on the baking sheet and bake 8 minutes. Top with chopped peanuts and serve.
