  • 2 cups water
  • 2 cups sugar
  • 8 oz. fresh ginger

Step 1

Bring sugar and water to a boil. Stir occasoinally until sugar is dissolved.

Slice 2 pieces (6 inches each) of fresh peeled ginger crosswise very thinly (about 1/8" thick). You should fill up a 1 cup.

Add Ginger slices to pan; simmer until translucent and tender about 20 to 25 minutes. With slotted spoon transfer to wire rack set over parchment paper. Spread pieces so they are not touching. You can reserve the syrup in frig.

Pour 1/4 cup sugar in a bowl; coat ginger pieces in sugar. Store in airtight container.
