  • Dressing:
  • 1 cup cilantro (about 1 bunch)
  • 3/4 cup mayonnaise
  • 3/4 cup vegetable oil or herb flavored oil
  • 1/2 cup diced green chilies, well drained
  • 1/4 cup red wine vinegar
  • 1/4 cup pepitas (pumpkin seeds), toasted*
  • 1/4 cup crumbled feta cheese
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Salad:
  • 1 large head of romaine or Red romaine lettuce
  • 1 1/2 cups seasoned croutons
  • 1/2 cup whole green chilies, well drained, cut into strips
  • 1/2 cup feta cheese
  • 1/2 cup pepitas, toasted.

How to make it

Dressing Directions:

Blend all ingredients in food processor or blender until coarsely chopped.

Chill for 1 hour for flavors to deepen. May store up to one week in the refrigerator-glass container is recommended.

Salad Directions:

Mix salad ingredients together and toss with dressing.
*To toast pepitas, place in a dry frying pan over medium heat and stir gently until lightly browned.
