Caesar Salad with Cilantro and Green Chile Dressing

Ingredients
- Dressing:
- 1 cup cilantro (about 1 bunch)
- 3/4 cup mayonnaise
- 3/4 cup vegetable oil or herb flavored oil
- 1/2 cup diced green chilies, well drained
- 1/4 cup red wine vinegar
- 1/4 cup pepitas (pumpkin seeds), toasted*
- 1/4 cup crumbled feta cheese
- 1 clove garlic, crushed
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Salad:
- 1 large head of romaine or Red romaine lettuce
- 1 1/2 cups seasoned croutons
- 1/2 cup whole green chilies, well drained, cut into strips
- 1/2 cup feta cheese
- 1/2 cup pepitas, toasted.

How to make it
Dressing Directions:
Blend all ingredients in food processor or blender until coarsely chopped.
Chill for 1 hour for flavors to deepen. May store up to one week in the refrigerator-glass container is recommended.
Salad Directions:
Mix salad ingredients together and toss with dressing.
*To toast pepitas, place in a dry frying pan over medium heat and stir gently until lightly browned.
