Potato Chip Crusted Cod

This recipe makes a delicious and easy weeknight dinner with a lot of crunch. Try using Kettle Chips brand in sea salt and vinegar or salt and pepper.

Ingredients

  • 4 (6 to 8 ounce) cod fillets
  • Salt
  • 2 tablespoons mayonnaise
  • 2 cups crushed Kettle potato chips

Preparation

Step 1

Preheat oven to 375°F. Line a baking sheet with foil and grease with nonstick spray

Place cod fillets on baking sheet and sprinkle a pinch of salt on top of each fillet. Spread the mayonnaise equally over the four fillets

Sprinkle equal amounts of potato chips on top of each fillet an then bake for 12 to 14 minutes until the fish is cooked through, flesh is opaque and flakes easily
