  • For the tacos:
  • 3 3 3 chicken breasts
  • 1 15 1 15 1 - 15 oz jar medium salsa verde
  • 1/2 1/2 1/2 cup chicken broth
  • 1 1 1 teaspoon garlic salt
  • 1/2 1/2 1/2 cup chopped fresh cilantro
  • 8-10 8-10 8-10 flour (or corn for gluten free) tortillas
  • 1 1 1 small red onion, sliced
  • 1/2 1/2 1/2 cup crumbled cotija cheese or feta cheese
  • 1/2 1/2 1/2 cup diced tomatoes
  • shredded lettuce
  • lime, for squeezing on top

Step 1

Whisk together Salsa Verde, chicken broth and garlic in crockpot. Add chicken breasts, toss to coat well, and cook for 4 hours on high or 8 hours on low.
Shred chicken with two forks in the crockpot and add chopped cilantro to chicken. Mix to combine.
Fill tortillas with a scoop of chicken, a few slices of red onion, a healthy scoop of crumbled cotija cheese, lettuce & tomatoes to taste and a squeeze of lime! Serve with Spanish rice and/or black beans
