Meat Loaf Cakes
From Ann Romney's cookbook. It is one of Mitt's favorite meals and she always makes it for his birthday dinner! My notes: I made this March 2014. Chuck loved it! I thought it was good too but not sure it was better than my regular meat loaf recipe. The sauce was quite sweet, which Chuck liked. I could really taste the lemon in this recipe, especially when I ate a bite without the sauce. I thought the meatloaf was a little tough. I remember reading another meatloaf recipe that stressed not to overwork the mixture when combining the ingredients, so next time I would be more careful with that. I used more onion then the recipe called for and oatmeal (that I had pulsed to have a texture more like bread crumbs), and those alterations worked out fine. I formed the mini meat loaves and put them all together in a baking dish, rather than baking in separate mini loaf pans. Overall assessment was positive and I would make them again.

Ingredients
- Loaves:
- 1 1/2 lbs ground beef
- 1 egg slightly beaten
- 1/4 cup onion, chopped
- 1/4 cup lemon juice
- 1/2 cup bread crumbs
- 2 t seasoned salt
- Sauce:
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 1 t dry mustard
- 1/4 t allspice

Preparation
Step 1
Preheat oven to 350 degrees. Mix together all ingredients for loaves. Shape and put into 6 mini-loaf pans. Bake15 minutes. Mix together sauce ingredients and spoon on top of loaves. Continue baking 30 more minutes. Remove and let rest 10 minutes before serving.
