  • Dressing:
  • 16 oz. Can Pinto Beans, drained & rinsed
  • 16 oz. Can Black Beans, drained & rinsed
  • 15 oz. Can White shoe Peg Corn, drained
  • 1 Cup Chopped Green, Red & Green Pepper
  • 1 Cup Chopped Onion (optional)
  • 1 Cup Chopped Celery
  • 1/2 Cup Olive OIl
  • 1/2 Cup Apple Cider Vinegar
  • 1/2 Cup Sugar

Preparation

Step 1

Stir and heat Dressing to dissolve sugar & cool.

Mix together the top 6 ingredients.

Pour dressing over bean mixture and marinate several hours. You can drain and serve with scoops or just eat as is. Lasts for several days.
