Italian No-Crust Rice Pie

Ingredients

  • 10 Eggs- Beaten
  • 1 Large Can Crushed Pineapple with Juice
  • 1 Pound Ricotta Cheese(Skim Variety)
  • 1/2 Pint Heavy Cream
  • 2 Cups Cooked Rice or Risotto
  • 1 1/2 Cups Sugar
  • 1 Teaspoon Vanilla Extract

Preparation

Step 1

Mix together, put in a 9" x 13" greased Pyrex dish and bake at 350 degrees for 50 minutes.
