Ingredients
- 3 T Extra Virgin Olive Oil
- 1/2 C Chopped White Onion
- 2 Strips Chopped Bacon
- 1/4 C Pork Sausage
- 1 T Flour
- 2 T Ouzo
- 1/2 C Chicken Stock
- 1 Sprig Mint + 12 leaves
- 1 1/2 Cup Peas
- Salt to taste
Preparation
Step 1
Cook bacon until crisp and set aside. Heat olive oil on medium and add onions stirring occasionally. Add 1 T water and cook until water evaporates. Stir in sausage and cook until light brown.
Stir in the flour and ouzo and cook for 30 seconds. Pour in the chicken stock and mint. Bring to a boil then lower to simmer, add peas and cook for 5 minutes. Salt to taste.
Spoon a little on each plate and sprinkle with the mint leaves.
