Kiolbassa Crockpot Quinoa, Sausage & Veggies

Quinoa is a grain-like species of goosefoot that is grown primarily for its nutritious seeds. Though it is not a true cereal it can be ground and used for flour, just like a cereal, or cooked and eaten like a grain. This superfood is extremely healthy and nutritious.

Ingredients
- 1 1/2 cups Quinoa
- 1 pkg Kiolbassa Sausage, sliced
- 1/2 cup Carrots, fresh sliced
- 1/2 cup Yellow Squash, fresh sliced
- 1/2 cup Diced Asparagus or Green Beans, fresh
- 1/2 cup Green Bell Peppers, sliced
- 1/2 cup Whole Kernel Corn, fresh
- 1 small Onion, diced
- 2 Garlic Cloves
- 1 tsp Basil, fresh
- 3 cups Chicken or Vegetable Stock
- 1/4 tsp Pepper
Preparation
Step 1
1. Rinse Quinoa and put into crockpot
2. Stir in all the other ingredients except for fresh basil
3. Cover and cook on low for 4-6 hours or on high for 2-4 hours
4. The quinoa is done when you can fluff it with a fork and has absorbed all the liquid
5. Sprinkle the fresh basil on top before serving
