Ingredients
- 2-3 chicken breasts (about 1 lb)
- 6 tbs soy sauce
- 3 tbs cornstarch
- 1/4 c. chicken broth
- 2 tsp grated fresh ginger
- 2 tsp sugar
- Salt and pepper
- 2 tbs oil
- 2 gr peppers cut into 3/4 inch pieces
- 4 gr onions, sliced into 1 inch lengths
- 1 bunch chopped broccoli
- 1 c. walnut halves
Preparation
Step 1
Cut chicken into 1 inch pieces. Set aside. In small bowl blend soy sauce in to cornstarch stir in broth, ginger, sugar, salt and pepper. Set aside. Heat wok, add oil. Stir-fry peppers, onions and broccoli 2 minutes. Remove from wok. Add walnuts and stir-fry 2 minutes or until golden. Remove from wok. Add more oil if needed. Stir-fry half of the chicken at a time for 2 minutes. Return all chicken to wok. Stir in soy sauce mixture. Stir until thickened and bubbly. Stir in vegetables, cover and cook 1 minute. Serve over cooked rice.
