Corn & Bean Fritters with Tomatoes

Ingredients

  • 4 ears of fresh corn or 2 cups frozen
  • 1 lb. grape or cherry tomatoes
  • 1 tab. vinegar
  • 1 15.5 oz. can butter beans rinsed & drained
  • 1 6 oz. pkg. corn bread mix
  • 1 egg
  • 1 tsp. chili powder
  • Olive Oil
  • Fresh Parsley

Preparation

Step 1

1. Take corn off cob. set aside
2. Coarsely chop tomatoes
3. Combine tomatoes, vinegar, 1/2 tsp. salt, 1/4 cup water. Cook covered, stir occasionally.
4. For batter, mash beans, add corn, corn bread mix, egg and ground chili powder. Add salt and 1/2 cup water.
5. Heat griddle and cook 1/2 cup scoops batter for 4 minutes per side. Serve Fritters with warm tomatoes and parsely.
