Corn & Bean Fritters with Tomatoes

Ingredients
- 4 ears of fresh corn or 2 cups frozen
- 1 lb. grape or cherry tomatoes
- 1 tab. vinegar
- 1 15.5 oz. can butter beans rinsed & drained
- 1 6 oz. pkg. corn bread mix
- 1 egg
- 1 tsp. chili powder
- Olive Oil
- Fresh Parsley

Preparation
Step 1
1. Take corn off cob. set aside
2. Coarsely chop tomatoes
3. Combine tomatoes, vinegar, 1/2 tsp. salt, 1/4 cup water. Cook covered, stir occasionally.
4. For batter, mash beans, add corn, corn bread mix, egg and ground chili powder. Add salt and 1/2 cup water.
5. Heat griddle and cook 1/2 cup scoops batter for 4 minutes per side. Serve Fritters with warm tomatoes and parsely.
