Ingredients

  • 2 packages of Italian Lady Fingers
  • 4 egg yolks
  • 1/2 cup of sugar
  • 1 lb of Marscapone cheese
  • 1 cup heavy cream
  • 1 cup freshly made espresso coffee (or 20 oz or 24 oz of Dunkachino from DD)
  • 1/4 cup cocoa powder

Preparation

Step 1

1. In a large bowl, beat the egg yolks with the sugar until the mixture is thickened and turns into a light lemon color.
2. Mix in Marscapone cheese and mix until smooth.
3. In a medium size bowl, whip the cream until stiff peaks form. Fold in the cheese mixture.
4. In a small bowl, pour the coffee and dip the lady fingers into the espresso (DO NOT SOAK).
5. In a medium size baking dish, line the Lady Fingers.
6. Pour in half of the cheese mixture and smooth.
7. Add another layer of the Lady Fingers dipped into
the espresso.
8. Pour the remaining cheese mixture on top and smooth.
9. Dust with Cocoa powder and chill.
Just before serving, dust with cocoa powder again. Garnish with chocolate curls and red raspberries and mint leaves.
