
Ingredients
- 2 T olive oil
- 1 heaping t Dijon mustard
- 1 T tarragon vinegar
- 1 egg yolk, whipped with mixer (optional, see note below)
- Salt and pepper to taste (be generous)

Note: egg yolk thickens the dressing, but you can omit it if you prefer.
