Ingredients
- 1 diced celery stalk
- 1 chopped onion
- 2 minced garlic cloves
- 2 peeled and cut sweet potatoes
- 2 sliced carrots
- 1 c. frozen peas
- 2 c. chicken broth
- 1 14oz can fire roasted tomatoes
- Salt and pepper to taste
- 2 c. leftover turkey or chicken chunks
Preparation
Step 1
Add all the above ingredients, except turkey to the slow cooker, stir to combine. Cover and cook on low 8 hours or until carrots are tender. Add leftover turkey, the last 30 minutes of cooking time and cook until heated through.
