Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 20 (8-inch) bamboo skewers, soaked in water
  • Salt and freshly ground pepper to taste
  • 2/3 cup honey
  • 3 tbsp. lime juice
  • 2 tsp. curry powder
  • 1/2 to 1 tsp. crushed red pepper flakes
  • Snipped fresh chives

Step 1

Cut chicken into small flat strips. Thread strips onto the tops of bamboo skewers to form small portions (about 2 bites each). Season with salt and pepper. Stir together honey, lime juice, curry and red pepper in a small bowl; set aside about 1/4 cup mixture. Grill or broil skewers for 4 to 5 minutes on each side or until lightly charred, brushing with the larger amount of honey mixture several times during grilling. Remove from grill and place on a platter; drizzle with reserved honey mixture and sprinkle with chives.
