  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 3/4 cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup quick oats
  • 1 cup semi sweet chocolate chips

Step 1

In a mixer, cream together butter, sugars, and peanut butter. Add in egg and vanilla on medium speed. In a separate bowl, sift together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients until fully mixed. Stir in oats and chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Flatten with a glass dipped in flour, or a fork in a criss-cross pattern if desired. Bake at 375 for 6-9 minutes, until edges begin to brown. Cool on wire racks.
