Mulligatawny Soup

Ingredients
- 1 medium onion, chopped
- 5 cups turkey or chicken stock
- 1 clove garlic, crushed
- 2 tbsp oil
- 2 tbsp curry powder
- 1/2 tsp salt
- 1/2 tsp ginger
- 1/8 tsp nutmeg
- 2 carrots, diced
- 2 stalks celery, sliced
- 1 can cream of chicken soup
- 1 14 oz. can stewed tomatoes
- 1 1/2 cups diced cooked turkey
- 2 Golden Delicious apples, peeled and diced
- 2 cups cooked rice

Preparation
Step 1
In a Dutch oven, saute onion and garlic in oil for two minutes. Stir in curry powder and cook one minute. Add next seven ingredients and bring to a boil.
Reduce heat; add turkey and apples. Simmer 30 minutes. Stir in rice and cook five minutes.
