Ingredients

  • 2 lbs. ground beef (I use LEAN Ground Beef, since we don't drain it for this recipe)
  • 1 med. onion chopped
  • 1 to 2 c. vegetables; chopped carrots, corn, peas
  • 1 1/2 to 2 lbs. potatoes (3 big ones)
  • 1/2 c. butter (1 stick/8 tbsp)
  • 1 to 2 tsp. Worcestershire sauce
  • Salt, pepper, other seasonings of choice

Step 1

1. Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2. While potatoes are cooking, melt 1/4 cup (1/2 stick) of butter in large frying pan.

3. Saute' onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put carrots in with onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked. The corn and peas will have plenty of actual cook time in the oven.

4. Add ground beef and saute' with salt and pepper until no longer pink. Add Worcestershire sauce (I love extra in mine). Add 1/2 c. beef broth and cook, uncovered, over low heat for 10 minutes, adding more broth as necessary to keep moist and enough to enjoy when forking into your mouth.

5. Mash potatoes in bowl with remaining butter, and season to taste.

6. Place beef and onions in 9x13 baking dish. Distribute mashed potatoes on top. Rough up potatoes with a fork so there are peaks that will brown and crisp nicely.

7. Cook in 400 degree preheated oven until bubbling and browned peaks (about 25-30 minutes) Broil for more color and crisp peaks.
