Classic Belgian Waffles

Indulge during your next brunch with these delicious Classic Belgian Waffles. This recipe makes it super easy to customize the flavor from chocolate to pumpkin spice.

Ingredients

  • 1 1/2 cups bleached all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups whole milk
  • 3/4 cup butter, melted, 1 1/2 sticks
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Preparation

Step 1

Heat a waffle iron. In a large bowl, mix flour, cornstarch, salt, baking powder, and baking soda.

Whisk together milk, butter, sugar, and vanilla in a medium bowl. Whisk in eggs, then pour milk mixture into dry ingredients and whisk until just combined.

Stir in ingredients to flavor the batter. (If leaving the batter out for more than 30 minutes, place the bowl with batter over a larger bowl filled with ice.)

Pour batter onto waffle iron, spreading to each corner. Cook until waffle is golden brown.

Makes 8 waffles.

For double chocolate chip waffles - add 1/2 cup cocoa powder and 1 cup mini chocolate chips to batter in step 3 mix thoroughly

For pumpkin spice waffles - add 1/2 cup pumpkin puree and 1 teaspoon ground cinnamon to step 3 mix thoroughly top with whip cream.

For bacon and chive waffles - add 1 cup of crispy bacon dices and 4 tablespoons chives to batter in step 3. Mix thoroughly. Serve with butter or smear of cream cheese or topped with scrambles egg.
