Red Velvet Cake

Ingredients
- Frosting:
- 3 large eggs
- 2 cup granulated sugar
- 1-2 oz. red food coloring
- 2 tbsp. unsweetened cocoa
- 1 cup (2 sticks) unsalted butter, softened
- 2-1/2 cups sifted cake flour
- 1-1/4 tsp. salt
- 1 cup buttermilk
- 1 tbsp. butter flavoring
- 1/2 tsp. baking soda
- 1-1/4 tbsp.white vinegar
- 3/3 cups (1-1/2 sticks unsalted butter)
- 8 oz. cream cheese, softened
- 1 lb. sifted powdered sugar
- 1 tsp. vanilla

Preparation
Step 1
Preheat oven to 350 degrees. Grease and flour 2 9" cake pans. Set aside. Beat eggs, and granulated sugar in a large bowl until well combined. Add the food coloring and cocoa, mixing well. Add the butter and mix well. In a separate bowl, combine baking soda and vinegar, stirring until the soda dissolves. Add to the batter. Pour batter into the prepared pans and bake about 20 minutes or until done. Cool on wire racks.
Frosting:
Whip the softened butter and cream cheese until they are completely blended. Slowly incorporated powdered sugar and vanilla. Slice each case horizontally. Spread frosting between each layer and on top of cake. Top with chopped pecans is desired.
