Cornucopia Salad

Light summer salad, crunchy and sweet, featuring mandarin oranges, black currants, and diced apples.

Ingredients

  • 1/2 head leaf lettuce, chopped
  • 1/2 head romaine lettuce, chopped
  • 1 C celery, diced
  • 4 green onions, diced
  • 1 11 oz can mandarin oranges
  • 1 avocado, chopped
  • 1 apple, diced
  • 1/4 C dried currants
  • 1/2 C blue or feta cheese
  • Optional: 3 cooked chicken breasts, diced or sliced
  • CANDIED ALMONDS
  • 1/2 C sliced almonds
  • 3 T sugar
  • SALAD DRESSING
  • 1/4 C oil
  • 1 T parsley
  • 2 T sugar
  • 2 T white wine vinegar
  • 1/2 t salt & pepper

Preparation

Step 1

1. Chop all ingredients. Save the apples & avocados until right before serving to preserve color.
2. Candy the almonds by cooking for a few minutes in a skillet until toasted.
3. Mix dressing & toss right before serving. Enjoy!
