Preparation

Step 1

Combine 3 tbsp mustard seed, 1 tbsp allspice, 3 tsp coriander seeds, 1 tbsp ground cloves, 2 tsp ground ginger and 1 cup pickling salt in a small bowl. This seasoning mixture is enough to spice 4 cups of white vinegar, and approximately 12 pint Mason jars.

Bring 4 cups of white vinegar to a boil in a medium saucepan and stir in the bowl of seasonings. Allow the vinegar to boil for another five minutes.

Rinse 35 medium cucumbers in cool water and place them into mason jars. If the cucumbers are too large for the Mason jars, slice them in half first. Fill the mason jars with as many cucumbers as each will hold. The cucumbers should stop approximately 1 inch from the top.

Pour the seasoned vinegar into the Mason jars, filling until 1/2 inch from the top. Place 1 tbsp fresh dill and 2 tbsp crushed garlic on the surface.

Seal the jars with sanitized lids and leave for 8 weeks before consumption.
