Ingredients
- 1/4 olive oil
- 1/4 cup grated lemon zest (4 lemons)
- 1 tsp. honey
- 1/2 tsp. fresh lime juice
- 1/2 papaya, peeled and diced, or 2 mangos
- 1 1/2 Tbsp. red pepper, minced
- 1 tsp. minced ginger
- 2 tsp. chopped cilantro
- 1 tsp. chopped green onion
- 1 tsp. minced red onion
- Pinch of salt
- 1 lb. sea scallops, about 12

Step 1
In a small bowl, combine 3 tablespoons and lemon zest. Let sit for 1 hour at room temperature. Strain mixture using a fine sieve.
In a medium sized bowl, combine honey and lime juice. Add papaya, red pepper, cilantro, green onion, red onion and salt. Mix well.
Heat 1 tablespoon olive oil in a large sauté pan. Sauté scallops over medium heat until cooked through, about 2 to 3 minutes per side.
To serve, place 3 scallops on each place and drizzle 1 tablespoon lemon oil over scallops Top with 2 tablespoons papaya relish.
