Oyster Stew - Slow Cooker

Ingredients

  • 3-4 pints oysters with liquor
  • 1/2 cup (1 stick) butter
  • 1 quart milk
  • 1 quart half-and-half
  • 1/4 cup Sherry
  • salt and white pepper to taste

Preparation

Step 1

1. In a large non-stick skillet, heat oysters slowly in their own juice until edges begin to curl (do not boil).
2. Place oysters and their liquor in the slow cooker.
3. Add butter, milk and half-and-half. Season with salt and pepper to taste.
4. Cook on Low for about 2 hours, or until heated through.

Variation: Use 2 quarts of milk in place of 1 quart of milk and 1 quart of half-and-half.
