Archie's Chili

Archie was a very dear, dear neighbor...He and Marjorie were married over 60 years....he was a WWII vet and an amazing gardener. He was raised in Texas and very proud of his Texas Chili. It's very simple, but filled with flavor.

Ingredients
- 2 lbs Lean Ground Beef
- 1 pkg Carroll Shelby's Chili Kit
- 1 15 oz Can Tomato Sauce
- 2 15 oz Cans of Spicy or Fire Roasted Diced Tomatoes
- 1 Med Green Pepper -- Diced/Seeded
- 1 Med Red Pepper -- Diced/Seeded
- 1 Med Brown Onion -- Diced
- 1 Cup Celery -- Diced
- 1 Lg Can Ranch Style Pinto Beans
- 3 Sm Cans Ranch Style Pinto Beans w/Jalapeno peppers
- 1 to 2 TBLS Chili Powder
- 1 to 2 TBLS Smoked Paprika
- Salt and Pepper to taste
- Shredded cheese & diced onion for toppings
Preparation
Step 1
In a large pot or Dutch oven brown ground beef. Drain any fat off. Add fresh vegetables, sauté for 10 minutes. Pour in tomato sauce, diced tomatoes, beans and spices. Cover and simmer for 15 to 30 minutes, finish off with masa pkg included in the Chili kit. Serve piping hot topped with shredded cheese and fresh diced onion
