  • 2 boneless, skinlesschicken breasts
  • 1 onion, sliced
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 1 orange pepper, cut into chunks
  • 1 can chunked pineapple
  • Lawry’s or Kroger brand Hawaiian marinade

Preparation

Step 1

1. cut chicken breasts into approximately 1 inch pieces

2. sauté in oil over medium heat until no longer pink

3. remove chicken from the pan and keep warm until needed again

4. sauté onions and peppers in oil over medium heat until tender

5. return chicken to the pan and add pineapple chunks

6. add Hawaiian marinade to cover, but not soak the stir-fry

7. serve with white rice, if desired
