Ingredients

  • 2 lb snapper
  • cajun seasoning
  • spicy salsa
  • red, green & yellow peppers (diced)
  • real hot peppers (diced)
  • 2 cups tomatoes (diced & seeded)
  • lime juice
  • onion (diced)
  • butter
  • salt & pepper (to taste)
  • hot sauce (few dashes)

Preparation

Step 1

1. saute´ above ingredients in butter until peppers are tender

2. keep warm while you are grilling the snapper

3. coat your snapper with melted butter and a good cajun seasoning

4. cook snapper on a hot grill turning once

5. when done pour some of the warm salsa over snapper

6. serve over white rice, if desired
