Ingredients

  • 700 g yellow noodles
  • 150 g of pork belly
  • 1 1/2 slices of sutchi fillet sliced into bite size (optional)
  • 1 egg yolk
  • 4 eggs
  • 6 or 7 Cup of water
  • 3 shallots (minced)
  • 2 garlic
  • 2 star anise
  • 1 cinnamon stick
  • 1 chicken stock cube
  • 2 tablespoon of dark soy sauce
  • 2 tablespoon of soy sauce
  • 3 small rock sugar
  • Black vinegar
  • White pepper
  • Sliced red chillies
  • 6 to 8 cloves of garlic, minced. (add in some oil, mixed well and set aside)
  • 2 cups beansprouts (optional)
  • 1 big piece of fish cake (thinly sliced)

Preparation

Step 1

Heat oil in a pot, then add in the minced shallots, star anise and cinnamon stick.
Add in the water, garlic and let them boil.
Add in the pork belly and eggs.
Add in the dark soy sauce and chicken stock cube.
Turn the heat to low-medium and let it simmer for 45 mins to 1 hour.
Add in the soy sauce and rock sugar.
Remove the eggs and peel the shells. Place back to the sauce to have a nice dark coating.
Remove the pork and cut into thin slices, set aside.
On the other end, cook the noodles and beansprouts and spilt them into individual serving bowls.
Coat the Sutchi fillet with egg yolk, flour and deep fried to golden brown. Put aside. (One can skip this step if you are not having the deep fried fritters.)
Thicken the sauce with corn starch flour and mix well. Add additional mixture of corn starch and water if the sauce is desired to be more sticky.
To serve, ladle the sauce over the noodles with beansprouts and serve with the sliced pork, deep fried Sutchi fillet, hard boiled eggs and lastly, topped with the garnish and condiments.
