Ingredients

  • Mozzarella Sauce:
  • 2 1/2-3 lb. broiler-fryer chicken
  • 2 eggs, beaten
  • 1/2 c dry bread crumbs
  • 1/4 c margarine or butter
  • 1 can (8 oz.) tomato sauce
  • 1/2 t dried basil leaves
  • 1/2 c shredded mozzarella cheese
  • 1/4 t paprika
  • 1 T margarine or butter
  • 1 T flour
  • 1/8 t salt
  • 1/8 t cayenne red pepper
  • 1/2 c chicken broth
  • 1/2 c half-and-half
  • 1/2 c shredded mozzarella cheese

Step 1

Cut chicken into serving pieces; cut each breast half into halves and remove skin. Dip chicken into eggs; coat with bread crumbs. Heat margarine in 12 in. skillet until melted. Cook chicken over med. heat until brown on all sides. Stir in tomato sauce and basil; reduce heat. Cover and cook over low heat until done, about 30 min. Prepare mozzarella sauce. Arrange chicken pieces in ungreased square baking pan, 9x9x2 inches, or round baking pan, 9x 1-1/2 inches. Spoon mozzarella sauce over chicken; sprinkle with cheese and paprika. Set oven control to broil and/or 550 degrees. Broil chicken with tops 6-7 in. from heat until cheese is melted and sauce is bubbly around edges.

Sauce: Heat margarine in 1 qt. saucepan until melted. Blend in flour, salt, and red pepper. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Stir in chicken broth and half-and-half. Heat to boiling, stirring constantly. Boil and stir 1 min. Stir in cheese until melted.
