  • 8 Pieces of Chicken
  • 2 Chicken Bouillon Cubes
  • 7 Slices of Bacon
  • 1 Green Pepper, Chopped
  • 1 Jar of Mushrooms
  • 1 Large Onion, Chopped
  • 6 Tbsp. Butter
  • 6 Tbsp. Flour
  • 1.5 Tsp. Salt
  • 1 1/2 Tsp. Pepper
  • 1 Tsp. Dry Mustard
  • 1/8 Tsp. Nutmeg
  • 1/4 Tsp. Hungarian Paprika
  • 2 Cloves of Garlic, Minced
  • 8 Drops of Tabasco Sauce
  • 1 1/3 C Sour Cream
  • 1 Tube of Ritz Crackers, Crushed
  • 4 Tbsp. Melted Butter
  • Grated Parmesan Cheese, To Taste

Preparation

Step 1

Simmer chicken breasts for 1 hour in salted water and bouillon cubes. Reserve broth. Skin and bone chicken and cut meat into bite- sized pieces. Place chicken in a 9 x 13 baking dish that has been sprayed with pam. Prepare the sauce; Fry bacon until crisp and then crumble. Saute green pepper, mushrooms, and onions in bacon drippings until tender. Drain, and set aside and then melt butter, add flour and chicken broth and stir. Add salt, pepper, dry mustard, paprika, nutmeg, garlic, and tabasco sauce. Simmer for a minute. Add sauted vegetables and bacon. Stir in Sour cream. Pour over chicken. Combine crackers, melted butter and Parmesan cheese. Sprinkle over sauce. Bake over sauce. Bake at 350 degrees for thirty minutes. Serve over rice or mashed potatoes.
