Curried Chicken & Rice

This is a great recipe to use up leftover chicken. With a little onion, curry powder, rice, raisins, and some frozen veggies, it becomes a delicious weeknight dinner!

Ingredients

  • 1 small onion, chopped
  • 4 teaspoons curry powder
  • 1 cup uncooked rice
  • 1/2 cup raisins
  • 2 cups chicken, cooked and shredded
  • 2 cups frozen peas and carrots, thawed

Preparation

Step 1

In a large, deep skillet heat 2 tablespoons butter over medium heat. Add onion and curry powder; cook until softened, 3 to 4 minutes. Add 1 teaspoon salt, rice, raisins and 2 cups water. Bring to a boil; stir. Reduce heat to medium-low; cover.

Cook 20 minutes. Stir in chicken and vegetables; heat through, 5 minutes.
