
Ingredients
- 3 Tbs Olive oil
- 8 chicken thigh bone in
- 1 red onion chopped
- 2 Tbs minced garlic
- 2 carrots cut into 1/4 inch disks
- 2 stalks celery chopped
- 1 tsp chicken base mixed into 1/2 cup water
- 1 cup dry red wine
- 1 can diced tomatoes [14-16 oz]
- 2 Tbs tomato paste
- 2 tsp Italian seasoning
- salt & pepper to taste

Step 1
Heat olive in pressure cooker on high heat [brown].
Add garlic, onion, carrots and celery and saute for 1 minute.
Add chicken, chicken stock, red wine, tomatoes, tomato paste and Italian seasoning.
Secure lid and cook on high pressure for 10 minutes.
Let pressure release naturally for 10 minutes, then quick release remaining pressure.
Salt and pepper to taste and serve.
