Ingredients
- 1/2 diced onion
- 1 minced garlic clove
- 1 tbs olive oil
- 1/2 cup chopped mushrooms
- 1/2 c. cooked and drained Swiss chard
- 1/2 c. ricotta cheese
- Salt & pepper
- 4 boneless skinned chicken breast halves
- 1 1/2 tbs butter
- 1 1/2 tbs bread crumbs
- 2 1/2 tbs dry white wine
Preparation
Step 1
Pound the breast to ¼ of an inch. Set aside. Preheat oven to 350 degrees. Sauté the onions and garlic in olive oil until soft. Add mushrooms and sauté until browned. Remove from heat and stir in chard cheese, ½ teaspoon of salt, oregano and ½ teaspoon of pepper. Season the chicken with salt and pepper. Spread ¼ of the chard mixture over each breast leaving ½ inch boarder on all sides. Roll breasts to enclose filling and secure with a toothpick. Spray a baking dish and place chicken rolls in dish. In a small skillet melt butter and add bread crumbs, then sprinkle mixture over chicken. Add the wine to the baking dish, cover with foil and bake 20 minutes. Remove foil and bake until crumbs are browned.
