Dolma

Armenian Stuffed Squash. As I browsed the internet for a photo, I saw that most "dolma" was photographed as wrapped grape leaves or the squash was cut length-wise. My grandma's recipes, and what I grew up on, are the wrapped grape leaves are called "sarma" and she would core out zucchini for her "dolma". So, I had to make this childhood favorite and take my own photo.
Ingredients
- 6-8 zucchini, depending on the diameter
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 can diced tomatoes, or can use fresh or even tomato sauce
- 1/2 cup rice, can add more rice, but I like a "meaty" mixture
- 2 tsp salt
- 2 tsp allspice
- 1 tsp black pepper
- 2-3 Tbls lemon juice

Step 1
Cut the zucchini to the height of your pan
Core the zucchini leaving approx. 1/4" flesh, (the insides can be sautéed with onions for another great side dish). salt and pepper inside of squash
Mix all other ingredients together and using this meat mixture, stuff the zucchini.
Place the stuffed squash upright in a pan and add 1 cup water in bottom of pan. (Can also add some extra lemon juice with water for extra taste)Cover and cook on medium to low heat for 45 minutes to an hour, until most water is absorbed and rice is cooked.
