Ingredients
- 1 c. butter, softened
- 1-1/4 c. brown sugar, packed
- 1/4 c. sugar
- 2 eggs
- 1 t. vanilla extract
- 1-1/4 c. all-purpose flour
- 1 t. baking soda
- 1 t. salt
- 3 c. sweetened flaked coconut
- 12-oz. pkg. semi-sweet chocolate chips
Preparation
Step 1
In a large bowl, with an electric mixer on high speed, beat butter and sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Add vanilla and set aside.
In a separate bowl, whisk together flour, baking soda and salt. Beat flour mixture into butter mixture. Stir in remaining ingredients. Drop dough by tablespoonfuls onto greased baking sheets, 2 inches apart.
Bake at 375 degrees for 10 minutes, or until golden. Cool cookies for one minute on baking sheets, remove cookies to wire racks to cool completely.
Makes about 2 dozen.
