- 2 TSP GROUND CORIANDER
- 1 1/2 TSP KOSHER SALT
- 1/2 TSP BLACK PEPPER
- 1/2 TSP CRUSHED RED PEPPER FLAKES
- 1/2 TSP GROUND ALL SPICE
- 4 GARLIC CLOVES, MINCED
- 3 TBSP BALSAMIC VINEGAR
Preparation
Step 1
PREPARE SAUSAGE CASINGS AS PER MANUFACTURE RECOMMENDATIONS.
CUT PORK AND FAT INTO 1 INCH CUBES, PLACE INTO BOWL, MIX WITH DRY INGREDIENTS PLACE INTO FREEZER TO FIRM UP,
GRIND THROUGH FINE PLATE AND MIX REMAINING INGREDIENTS AN STUFF INTO CASINGS, COOL TILL AN INTERNAL TEMP OF 160 F AND SERVE
