Ingredients
- 3 eggs, beaten
- 2 c. sugar
- 1 c. oil
- 1 T. vanilla extract
- 3 c. all-purpose flour
- 1 t. baking soda
- 1 t. cinnamon
- 3 to 4 apples, cored and chopped
- 1 c. chopped pecans
Preparation
Step 1
In a large bowl, combine eggs, sugar, oil and vanilla until well mixed; set aside.
In a separate bowl, mix flour, baking soda and cinnamon; stir into egg mixture. Fold in apples and pecans. Divide batter equally between 2 greased and floured 9"x5" loaf pans.
Bake at 325 degrees for one hour and 10 minutes, or until bread is golden and tests done with a toothpick.
Makes 2 loaves.
